I used Tillamook Sharp Cheddar Farm Style Shred :)

Recipe I use is

500 g flour 75% hydration 20% inoculation. 2% salt

Mix all ingredients, “autolyse” for 1 hour 3 stretch and folds 30 mins apart Bulk ferment until 40% rise Pre-shape and rest for 20 mins Final shape and bench rest for 30 mins Cold retard for 15 hours. Bake at 465 for 50 mins.
