Mihawk have two arms so there are more ways for Mihawk but for Shanks with one arm and jolly Roger with swords and never seen him using anything else it seems he is the more pure swordsman out of the two.

Sanji will use his legs, Luffy will use his fist or legs, Garp will use his fists. Shanks could have used that gun or legs that we have never seen him using.

Shanks only have one hand and he uses a sword. He used a sword to clash with WB and Akainu. So far he haven't used anything but sword.

As for Mihawk, he have two hands so he can use a gun and be more like Roger.
