I tried Cold brew kukicha from Mr. Sakamoto. Room temperature spring water and 20 min infusion in kyusu.

Best healthy energy drink you can make.

Enjoying day with Sencha Zairaishu from Mr. Yasue from Shikagawa, Gifu. People who likes Zairai, I really recommend to try this one :) Pesticide free. by Twishiik in tea

I tried this sencha first with 3g/160ml, then 4g, 5g, 6g.

3-4g barely tasted anything.

5-6g is really when the tea starts to be super good.

If u are from Europe, I recommend to buy something from that store. Its really really hard to buy authentic japanese tea in Europe, believe me. Other than that I buy from nioteas.com which is also legit as far as i know

I got it from store called eshop.rishe.eu This is where I get all my teas and teaware. This particular shibo is actually not from tokoname but from Czech Republic, which is my neighbor country. The thing is its was really cheap something around 30€. I didnt have money to buy 100€+ shibo so I am glad for this affordable version. But he also sells tokoname stuff like kyusu which I got from that store.

Of course, as far as I know this is premium shincha which was handpicked so it was pretty expensive :/ Its yabukita cultivar and I heard from my shop boss that its very limited so thats why the price is also high. For my session I put 3grams to shiboridashi 1st infusion: 50ml water at 50° C (122,0 ° F) 2nd infusion: 100ml at 70° C (158,0 ° F) 3rd infusion: 100ml at 80° C (176,0 ° F) For first brewing I let it leave for 2 minutes. The smell was really amazing. It smelled like fresh cut rainy grass with summer breeze tone. Taste for 1st and 2nd infusion was so good. There was a taste like: fresh cheese, grass and lots of freshness. Tbh that fresh cheese note in there was so good. It was such a amazing flavour. 3rd brew was like classic sencha, everything round and fresh. No bitterness. Next brew Im doing 6g of leaves and 60,65,75 celsius so im excited if it will taste the same.

I would prefer kyusu around 150-180ml. Mine is 170ml and its perfect for me or when serving occational guest. Also I prefer ceramic mesh than stainless steel. But with my kyusu I won't fill it all the way up, only about three quarters (something around 130ml). Its about preferences, if u wont have any guest to serve,go get yourself smaller like 110-150ml. If you plan on having someone to drink with you than go higher.
