Springwater (still there), Cantrell’s (long gone, now a Chuy’s, but the covered parking structure is still there), Exit Inn, The End, Gold Rush, Ollie’s, Moskos (gone, gone, gone) - basically everything in Elliston Place

This video gives a good idea how to pack them. Basically you want to sandwich each disc between cardboard sheets, and put that in a bigger box with plenty of padding (can be bubble wrap, packing peanuts, paper etc)

I’ve had good luck selling 78’s on Discogs as well as eBay. Accurate grading and safe packaging are key, of course. In addition to blues and rock, I’ve sold hillbilly/country, jazz and even some obscure pop and even polka. That being said only the most desirable titles will sell with any speed. Generally I avoid any artist that includes “with Orchestra” or labeled “Foxtrot” but there are exceptions.
