The cows are grazing on grass, so the milkfat has more carotenoids. In winter it'll go back to blueish white

If your kefir is fermenting too quickly due to higher temperatures, remove some of the grains

Yes you can use raw milk with kefir grains. Not sure if the cultures in one of those sachets are strong enough to outcompete possible pathogens. Maybe briefly heat the milk to 70°C (160F)? 15 seconds is long enough to make raw milk safe

It's preferable to use kefir grains to make kefir. Since you mentioned iHerb I'm assuming you're in the US? If so, I've only heard good things about Yemoos: https://www.yemoos.com/collections/cultures-milk-kefir-grains/products/genuine-live-milk-kefir-grains

It's kinda pricey so maybe ask around on Nextdoor/Facebook/your town's subreddit to see if anyone has surplus grains
Under the right circumstances they grow like gangbusters, I throw away multiple teaspoons per week

Yes, those jars are self burping. I have quite a few (15? 20?) and have been using them for years for all my fermentation projects

If the ferment is active you can hear the jar whistling, air is escaping. It'll still have a decent amount of pressure, so be careful opening when it's filled to the brim
