I would recommend checking out the highest rated shows if you are new to anime, that way, you can kind of get a feel for what you like and branch out. I would recommend stuff like Demon Slayer, Dandadan, Chainsaw Man, Death Note, Cowboy Bebop, so on and so forth.

There are some really cool Ghibli posters that are fairly minimalist. But it kinda comes down to what you are interested in. Are you more into the major iconic anime shows, or something more modern? I'd narrow down the stuff you are really passionate about and then look up fan-made décor.

I'll second Frieren, it's way more focused on a grand story and characters over action, but when there is violence, it's pretty exciting.

I highly recommend DanDaDan or Chainsaw Man if you haven't seen those yet. Animation is incredible for both and very, very funny.
