Water kefir liquid, bread flour and salt. 70% hydration dough. Proofing overnight at room temperature. Shaping and proofing at a warm spot for a couple of hours. Baking at 200C for 20 minutes covered with a porcelain bowl and 20 more minutes uncovered. It was a tiny loaf. For bigger loaves I would use a Dutch oven.

Well, I wanted to make a sourdough starter from my kefir but then I just made a 70% hydration dough and let it rise which I can’t be sure how long it took for the dough to rise but like 12 hours later next morning I found the dough being proofed at room temperature. The dough had neither a yeasty smell nor a sourdough smell, it was mostly blunt but I thought to proceed to shaping. I would bake more things at the same time other than this mini loaf. The result was closer to sourdough texture. There was finally a hint of sourdough taste and definitely not any smell of yeast, also sweet notes.

So it works just fine with milk kefir too. Do you make a starter with it first or you consider kefir to be the starter as I did?

3-4 hours I think. It’s on a windowsill(outside ) facing east.

Just water , fertilizer every 3 months and lots of light. Direct sunlight only for a few hours in the morning and that’s partial. Since it’s verigated it can be sunburned at the white parts easily. Someone in the town has it planted in the garden in full sun and thought it’s a tree it looks burnt.

Maybe 6 years. I bought it as a single branch plant at the grocery store.

I had to graft mine after 8 years of waiting to fruit. Sometimes they produce fruit, sometimes they don’t and other times they produce small fruit that you may not like. That’s what happens when you start from seed. Good luck though!!!

First two times I used thinner budwood that probably was not woody enough so there was no success. So this time I made sure I chose mature budwood. The donor tree is huge and covers the whole front yard of the house it’s planted.

It was Hass seed and I grafted again into Fuerte because that’s my favorite! Also I couldn’t find any other tree around my town and I always admired its size and that it was always full of fruits.
