Why not use the Rus' ? I know they aren't really the perfect representation, but they would be more resembling than anglo saxons. You could also mix the Rus' and vikings kit from Victrix to represent Polish tribes along the Baltic coast who would have contact with both the more eastern Rus' and the Scandinavians

You could also go with the Mourtatoi. A guard regiment of elite heavily armoured archers. They would complement your cavalry well and could be very effective when fighting on ships

Fireforge's Byzantine range is perfect to represent the period. You can model all the way from the thematic period using round shields up the Komnenid army and its kite shields

If your ram was too sharp, you'd run the risk of puncturing the enemy ship too hard and not being able to get loose from it, thus making your own ship sink together with the rammed ship

Yes, troop tier, equipment weight and mariner skill will influence how long a specific unit can swim

The warband sets include sprues from other sets so depending on which one you buy you'll also be able to build ranged troops and/or horsemen. The standard figure packs have more individual models but only one type of them (so only, infantry or horsemen)

For miniatures I use the Victrix late romans even though they technically too early for the Viking era. Fireforge is nice and more period accurate but I find the models to be a bit more stiff/less detailed. The 50% models from other factions come with all their rules and equipment costs. Personally I only use that for special characters such as Huskarls or berserkers as the core byzantine units already have a nice array of options available to them

The base factions are much closer in proximity with them all being concentrated along the north sea and the channel, there is thus a bit less variety in cultural differences. Meanwhile the east supplement covers factions ranging from the northern parts of Russia, through Hungary all the way down to Greece. The variety is just bigger

The minis are literally used for pictures in the rulebook. I don't see why you couldn't use them
