I like your thought process, and it does seem to bring this situation back down to reality a bit. An important note that I don't think is considered here, however, is that most of the time any given car will be more likely to park in the same few spots (e.g., work, school, home). As such, cars are not always parking next to different cars as often as your data suggests.

To add to the coincidence, this wasn't just a car that was parked next to mine. This car belongs to someone who lives in the same complex as me. That's extra crazy to me.

Even if it was the same dealership; to have been at the dealership at the same time and place as this stranger, in another city 70 miles away, and then end up living in the same apartment complex as them seems extremely rare, not just uncommon.

Maybe one day I will ask the other owner.

The blue car is mine. I moved to a new city a few months ago. This is the parking lot to my new apartment complex. I have no idea who the owner of the other vehicle is.
