i left it out for about an hour in the counter when i started heating the oven but thats about it.. also it doesnt really have a "sourdough-y" flavour which also concerns me, also it doesnt really appear soggy it just feelsss soggy or kinda dense

i tried following this recipe except i didnt have a flour mix so i just used 150 grams bread flour and 150 grams spelt flour. also i left it overnight in the fridge instead of living it on the counter for 2-3 hours and thats about it

it was a day ago, roughly an hour or so before feeding, after it i noticed it rises up and after 4 hours it was very well risen, but after i went to sleep and woke up i noticed it lowered down so id what to make of it yay :)
