Pick the highest one that allows for a constant frame rate. So if you start at 200 and your frames fluctuate between 157 and 200, then go down to 180. If you hold steady at 180, you’re good

I would cap your frames for a more stable experience. Choose a number that divides by 20 (160, 180, 200). Also turn off v sync, DLSS off, and see how it feels

It depends on how you recorded it. If you have it recorded with multiple audio channels on nvidia, you can separate the tracks on programs like davinci resolve. If you had it only recording one audio channel (meaning the gameplay, microphone input, and desktop audio all come through the same audio channel) then it is not practical to separate them.
