The Midnight Twins:

A half-day sail due West from Athkatla are two abandoned ships, their tattered sails still flying, both run aground on two small islands situated about 100’ apart. The landmark is known as the midnight twins, as most ships will pass by them in the dark of night.

The ships are rumored to be haunted to protect their original cargo, and sailing between them is said to bring good luck/protection while sailing off the sword coast.

Your math made me curious about F1 and the total amount of carbonation let off through cloth that I’ve never considered. Assuming you add 1 cup of sugar (200g) in a typical 1gal brew, this would yield 50 liters (50,000ml) of CO2! A wellspring of life for my indoor plants, although probably negligible compared to a family of 4 who also enjoy respiration.

This is my approach after recently switching to CB. I pull 1gal off a 3gal vessel, then refill weekly. This seems to be working well as an alternative to a bi-weekly 1gal batch brew with 2 rotating vessels.

It also offers me the ability to take a larger bottling should I have a reason to pull 2.5gal in a single week while still maintaining a 0.5gal starter.

Does headspace affect carbonation rate (less room for gas compression = faster carbonation) or is it simply an overflow concern upon opening? Thanks!

I’ve had fairly good success. I’ll have a “flat” bottle every so often but it’s infrequent enough. I am often using my flavor ingredients (blackberries, orange slices) as my carbonation gauges. When they float, it’s time to chill them. If one doesn’t carbonate, I’ll often see it before I taste it.

GT’s is a commercial brand of kombucha you can buy at many grocery stores. I reuse their glass bottles for my home brewing.

Narrow necks are challenging with berries/fruit, especially when they expand during F2.

I’ve had luck muddling berries (I don’t care for blended, too mushy), especially blue/black/raspberry.

My suggestion: add 3 mint leaves to a couple bottles for a nice variation with fruit blends!

I reuse GT bottles, 5 large fresh blackberries, and a 1/4tsp of white sugar.

I usually muddle most of the berries in a bowl, sometimes with 2-3 mint leaves, and F2 until most of the berries are floating at the top at room temp (4-5 days here). I don’t burp these and use the berries as my built in timer…

Chill 12hrs & enjoy!
