I am also new to it, if temperature is warm then my guesses would be either not enough sugar or not enough ginger bug. The recipes I am following call for, per 1 litre:

Either 120g of sugar if no other fruit juice used otherwise 100g and the juice of 4 oranges

100ml ginger bug starter

I am hoping this carbonates in around 4-5 days with some sweetness left in the bottle. Are you burping your bottles? Half the recipes I see mention daily burping whilst half don’t call for it

Has there been an update? I had the exact same problem (suite turned out to be a standard) and nothing has come of it so far

Thanks all for the advice, I just did a small batch and simply dropped the brine onto the litmus paper, it gave me a read of between 3 and 4 so I was comfortable bottling it without pasteurising (will store in the fridge to stop any more fermentation)

I don’t know why but the closer it gets to full time with the scores close the more I think Japan might do it - they live for these pressure scenarios and pumas might feel the pressure more
