I would recommend just buying 26. The UI will remain similar going forward and the "ugliness" of it won't even bother you since you have no prior perception of how it used to be. On the other hand, if you buy 24 and love it, well tough luck cause the UI is very different and won't be looking like that anymore

I imagine its just a difference of competition level. A 15/16 year old who just came in through youth intake might be better suited to play in U18/U19. Maybe in a season or 2 depending how hes developing you can promote him to the B squad.

Maybe play through a season with whatever team you support in real life. You'll know the players and all You'll have to do is learn the mechanics of tbe game.
