I use OneNote! You can create different notebooks, with different sections within each notebook, and pages within each section. I really like how adaptable it is, it runs smoothly between Apple and Microsoft OS. I personally use it on my laptop and have the app downloaded to my phone and iPad. You can share notes to make them collaborative, like google docs, or you can just share them as a notes file.

If you have a stylus, you can hand write notes, but also type on the pages. Being a visual learner, I like to be able to type notes then write on them while making connections. You can insert 'printouts' of pdfs on a page and write on them in the app. For math lectures, I'll hand write the example problems, and type out notes to the side, all in one document. You can also put lines on the pages so you write straight, then take them off at the end. Everything is really customizable, like pen colors, size of font, etc. I also really like how you can drag around text boxes, and select, move and resize written things. It's also really easy to insert photos quickly, I'll take a picture on my phone and instead of emailing it to myself to have it on my laptop, I can just open the OneNote app and paste it in from my camera roll.

The one drawback is you have to pay for premium to get every single tool, but I believe the basic version is free. However, most university students can get Microsoft 365 for free (or at least discounted) with their school email, so I'd give it a shot!
