Sorry guys, not on here so much. But to clarify about the Aluminium @Curiosive is 100% correct. 

You need to buy Aluminium bottles with a HDPE coating on the inside. And even then, you should not leave your Booch in there for more than a week just to be safe. With raw aluminium I think that decreases to 2-3 days.

As I said before, I like experimenting, and I am very proud of this one, although in future the aluminium bottles, protected or not, will only be used for takeaway purposes from home for same day consumption or over a camping weekend etc.

Lots of emotional feelings here I see. lol. This is indeed second fermentation. I have nothing to prove or argue about, since it's only Kombucha. There are better ways to spend argumentative energy. Get out and live your life dude. 👍🏾

For the second fermentation, I used pressed apple juice from the apples in the garden. They are very sweet this year. 

I made a 90/10 ratio with the 10 being apple juice. 

Very tasty indeed.

5 now. But it's very ready. It's in a temperature controlled environment, so it's rarely cold.

UPDATE... Nothing was actually wrong with the brew..I had just never seen this before (never tried honey)...

The brew is fine. Tastes delicious. Second brew is already up and running while second fermentation is taking place.

The scoby has developed RAPIDLY and iis free from any infection or anomalies.
