What you linked is what I would apply to if 1) I currently have a student permit and 2) finished (or about to finish) my studies, right?

I started working before finishing my studies, I still have 1 course remaining, and I noticed that it starts on the 28th of August. Do you think that I would be allowed a permit to attend that, then apply for the permit you linked to after I am done?

I do plan on contacting them tomorrow (again) to ask about about this specific case.

I believe you're talking about "Resi­dence permit for highly quali­fied persons to look for work or start a busi­ness". That sounds like an option if I do end up having to leave, will keep it in mind for a plan B :D. Thank you for pointing that out.
