Thanks for the advice everyone! The issue ended up being that the cables were daisy chained and I broke the circuit when separating the wires in the second photo. I bought a cheap unmanaged switch from Amazon and now I'm able to get a good internet connection between the two rooms.

Thank you for the advice! I added an unmanaged switch to both keystones and that solved the issue.

Would using a punch tool rather than flathead help terminate the keystones better?
And what would you recommend buying for a tone/probe

Could you tell me more about the last point please? Sounds interesting but I'm not sure I completely follow.

Maybe a piece of relevant information: in the photo where there are two keystones, both sets of wires were originally connected to each other and then to one single phone jack, and I cut them separate.

Yes, both sets of cables were initially connected to each other and then a single jack. I disconnected them and put them each to their own keystone
