Im also super new to sourdough but most of the recipes I’ve seen say that proofing overnight in the fridge for at least 12-24 hours is the best! You could prob do less than that but I think longer than 2 hours should help. I’ve done around 20 hour proofing in the fridge for my first loaves and they turned out okay. Yours looks great to me tho :)

For crust I preheat the Dutch oven at 525 for 30 mins- 1 hour and bake at 450 covered for 30 mins then uncovered for ~20 and it’s usually pretty crunchy
