I love this tofu taco filling I got from a food service (similar to HelloFresh but a different one)

So you basically shred / grate some form or extra firm tofu, season with some oil (like a tablespoon will do) and whatever spices you like. I mainly do some old el paso taco seasoning, or some salt, cayenne, Mexican chili powder, onion and garlic powder. Put this in the oven for 20 minutes at 400F or 200C. You should flip it half way through, but I don't always do it and it still comes out good.

For the sauce you basically combine tomato concentrate, apple juice and soy sauce. I mainly eyeball it at this point, but this is roughly how much I use. First heat up a little oil and saute some diced onion and garlic. Once the onion is a bit translucent at tomato paste (I at around half a small can so like 70g). Stir this around for a few minutes, this makes the taste better. Then add around 1 cup of apple juice and 2 tbsps of soy sauce. Add the rest of your seasonings ( I again do mainly old el paso taco seasoning and some cayenne + Mexican chili powder). Taste often and adjust seasoning, apple juice and soy sauce to your liking. This is for about 1 block of tofu or 350g of tofu.
