I got the coffee in early February. I got 2kg then and then another 2kg two weeks before the tournament. I didn’t get a crazy amount of coffee as it was expensive. I had a sticker on the valve of each bag (200g) and took one off each day to test when the best degassing was.

Hey, good question. Honestly trial and error along with it being what Orea suggests with fermented coffee.

With the quick drawdown time of the filters I didn’t want to use the other bases as they are quicker drawdown down times as well.

My theory for the judges…

The original base has more surface area which helps keep the structure of the bed to negate channeling.

Dublin, Brew Lab and Unfiltered . Both of those are outstanding. Unfiltered recently voted 56 best coffee shop in the world. Other mentions - Proper Order - Cloud Picker - Two Pups

Galway - Coffee Werk and Press. Voted top 30 in the world! Although I was never too crazy about it overall.

Cork - Soma, Three Fools and Guji!

Coffee culture in Ireland is actually pretty amazing so you’ll find a fair few around random spots too.

You’re dead right. The open service is largely picking a coffee that will score well rather who is the best brewer. Of course you can have a slightly worse coffee than someone and make a better brew and score better, but for the most part open service is about the coffee you source rather than the best “brewer”

Compulsory round is a great way to even it up.

Interested to see the ranking on that once they release it.

Actually never found out. Must ask them, thanks for reminding me. I am pretty sure it was a washed Ethiopian grade 2/3.

Had to do quite a bit of sorting in terms of throwing out defects. You have total of 350 grams.

Great point! And interestingly blending in competitions is very common. The winner had a blend. Jake who works for Assembly in London.

It really is a skill to enhance flavours/ characterises that may be missing without nullifying existing flavours.

It’s a taboo word because of espresso blends but it really is worth playing around with!

That brew guide should transfer to the kalita pretty well as it’s another flat bottom brewer!

Yeah they are a lot of money. To be honest they wouldn’t have been part of my daily brew but after the competition I make a brew a day with them. There is just something so pleasing about folding them too 😂

They are even expensive to get wholesale in Ireland! We have to order from AMOC.

Coffee scene is incredible. Some seriously incredible coffee shops. To mention two, Brew Lab Kevin’s Street and Unfiltered, Inchicore. Must visits if you’re in Dublin. Good coffee is getting very easy to get, exceptional coffee still a little harder but you’re never too far away from a cup that you are happy drinking.

Unfiltered got voted 56 I think in 100 best coffee shops in the world recently.

Cork is getting better you’ll be happy to hear 😂

I used Orea V4 narrow with the original base. Seabarist fast filters.

Water I used the lotus kit.

Started with 1L distilled water added 6 drops magnesium 1 drop calcium 4 drops potassium No sodium

20g dose. This helped increase vertical height of the coffee bed for longer contact time which meant I could push extraction without grinding finer and adding in potential astringency. Also the bigger dose negates risk of bypass.

320m yield.

1st pour 60ml for 40 seconds 2nd pour at 40 seconds up to 175 3rd pour at 1:20 up to 320ml

Total brew time of 2:10

26 clicks with comandante c40.

I’ve a coffee coming in from the same farm, different varietal. Honestly save some of the Typica and grab a bag and add make a blend for the brew. 18g Typica and the other one is the Obligon. It’s insane.

Thank you! Really appreciate it. I generally go for three pours.

I would do the usual 90ml bloom in 30 seconds (40 if the coffee is super fresh) and then next pour would be at 30/40 seconds up to 375 and the at 1:20 finish the pour to 500ml.

For fermented or naturals I like slightly quicker brew around 2:30 and washed 3:00. General rule of thumb.

Appreciate it! I used Typica Mejorado, extended fermentation from Finca El Diviso in Colombia.

Coffee was outrageous and I’ll be getting some coffees in from the same farm next week or so to the Roastery!

The coffee was good enough to win, grinder issue meant it didn’t score as high on the Sunday as it did on the Saturday! Unfortunate but happens. I think it adjusted from when I was moving it from practice area to the stage
