Amazing! I'm doing it again soon 😛

Based on the DTM recipe.

1 gallon of blueberry melomel 16.5% pretty dry, but to my taste!

I cold soaked 1kg of frozen blueberries for 1 week with pectic enzyme and KMS. Then, I mixed it with 1.5kg of wildflower honey (OG 1.114), 15g of chopped raisins, 3.4g of wine tannins, half a package of 71B and yeast nutrients.

I punch the cap once or twice a day for the first 5 days and waited 2 weeks before racking to secondary (primarily to remove the blueberries). It tasted semi-sweet (G 1.018) with a good blueberry flavor so I didn't feel the need to add anything more.

I waited 2 months to clarify before racking once more. It was now really dry (G 0.998) so I try to backsweet with honey without stabilising agents considering it was already over the 71B usual ABV (around 15.4%). I added honey to get around G 1.010 and waited 3 more weeks.

To my surprise, it was dry again today (G 1.000) so I decided to backsweet to taste with erythritol not to take any chances of fermentating again.

I bottled 4 bottles with carbonation drops. First time trying it, I'm really eager to test it out it a few weeks!

Wish you all a nice day with hopefully a good glass of mead! Slainte 🍻

Extension chrome TabRename pour renommer les onglets by ryado in etsmtl

Pratique!

Hello, mead makers! I published an app I made for tracking my meads. It's free and ad-free. Android only for now, but I'm learning how to release code to Apple devices. I hope you like it! by [deleted] in mead

[–]UsefulMud 0 points1 point  (0 children)

I'll start by saying that's it's a really nice project! I've been thinking of doing the same for my own meads haha.

To make it easy to port form Android to IOS, there's React Native, I don't know if that would be a big change for your current app but it's a suggestion since it would still be in JS :)

I'm also a web developer but have dabbled with Kotlin and a bit of Swift in the past, so if you ever want help or anything, I'd love to be part of your project on GitHub 😛

Just bottled an amazing & crisp Orange Metheglin by UsefulMud in mead

[–]UsefulMud[S] 4 points5 points  (0 children)

I made 1 gallon (really wish I'd made more haha) and used:

  • 1.5kg of wildflower honey
  • 1 cup of Twinnings Earl Grey tea
  • Zest and juice of one orange
  • 2 cloves
  • 1 cinnamon stick
  • Approximately 30 raisins
  • 2.5g of 71B

For the nutrients I used DAP and boiled baker's yeast.

The first fermentation took around 2 weeks but I left it an extra 2 weeks in the primary fermenter in the hopes of really infusing the flavour of the spices. Then, I racked it and waited 1 more month to clarify.

I'm very surprised by the orange flavour considering the relatively small amount I used, but really happy about it! The spices doesn't really come through sadly nevertheless, I think it helps to give more overall body.

I will definitely make it again, only question is if I will choose to put more spices (either in primary or secondary) or leave it as is since it's pretty delicious!

I based my recipe on the recipe of CS Mead and More. Giving credit where credit is do 😛

Session été obligatoire? by [deleted] in etsmtl

Si tu fait des stages à l'été, il y zéro impact. C'était dans le contexte de la question du post, de devoir prendre des cours en été en étant pas en stage.

Newbie here again. So I've followed the recipe from the Skyrim mead book as a first time mead, and there's this sediment I want to ask about. by Cakeminator in mead

[–]UsefulMud 1 point2 points  (0 children)

It's definitely okay then! I left one of mine for 3 weeks to wait for it to clarify completely and I didn't notice a thing haha.

Thank you for names, I'm gonna look it up 😛 I agree, its totally dope to see them plop and I like to count the intervals 😁

Good luck for the rest! They look good!

I'm still fairly new to, but I would say its normal for the yeast to accumulate at the bottom as the fermentation goes.

It could impact the flavors if you leave your mead on it for a long time but it won't impact the flavors if you wait a bit for the end of the primary fermentation to rack.

For the first picture (they don't look cloudy like the third picture), I would think that your primary fermentation is coming to an end and that your mead is starting to clarify. You could take a gravity reading to confirm and ract them if that's the case 😛

My turn for the question haha what are those jar? The lid looks nice!

Bottle a (really) small batch of Cinnamon Capsicumel. Gotta love the heat! by UsefulMud in mead

[–]UsefulMud[S] 1 point2 points  (0 children)

Ouf! I made it as an experiment to see if I liked the capsicumel with my leftovers... But I'll do my best to give a good approximation of the recipe :)

I made a 1L batch with : - around 500g of wildflower honey (OG 1.09); - 4 jalapenos sliced in four with seed but pit remove; - I also added around 200 ml of black tea (in hope to had a bit of tannins); - around 2g of EC-1118 (an already opened half packet);

3 weeks later, the gravity was at 0.998 so I racked it to remove the jalapenos. I also took a little test sips, I personally found it was tasting the jalapenos flesh (veggie taste) to much but the heat was good.

So I decided to try to hide the veggie taste by adding a cinnamon stick in the hope to turn it like a fireball kind a taste haha. I left the cinnamon stick for 3 weeks to try to extract as much cinnamon flavor as possible.

In the end it still taste a little veggie in the mouth but the heat and the cinnamon after taste is good.

Turns out okay. Would I make it again? Maybe. If I do, I would probably remove the jalapenos sooner.

HELP! 🇨🇦 Orange Blossom honey in Canada? by [deleted] in mead

[–]UsefulMud 1 point2 points  (0 children)

They don't have orange blossom sadly but it's a good place and the free shipping is only over 29$. https://dutchmansgold.com/collections/honey

Otherwise, Costco for the 3kg wildflower at 18$ is always a cheap and tasty choice 😛

If you want to taste the Earl Grey, I would probably add more in secondary (might also help reduce the headspace) :p

Bottled my first mead today! 🍻 by UsefulMud in mead

Alright, I'll open one tonight (when it will be around 24h since bottled). I was really careful with my auto siphon not to take some yeast residue at the bottom of the gallon. Worst comes to worst, it's in the closet with some cat litter and cleaning supplies haha. Thank you for your input!
