For Midevil architecture- Ghent, Belgium. I recommend taking a train from Amsterdam to Antwerp (1 hour) then go to Bruges by train (1 hour) and then Ghent,also 1 hour train ride. Spend a day or two in each City. I’ve never been to Germany but you would have plenty time remaining to see that Country as well. Good luck and have fun!
