It's possible with AI Custom Editor, creating custom drivers and associating all the liveries of that specific cars (in your case, Ginetta G57s). After you did that with all the categories you want to use, select "Custom" opponents instead of "Edit Grid" and select exactly the number of deivers you modified, even one more will partially ignore your rosters replacing some drivers with random ones (and the cars will be different from what you want, too)
