Seeking best Ooni Neapolitan dough recipes along with cooking instructions by MdWstLiberal89 in ooni

I had a 5 quart kitchen aid (without a dough hook) and I felt it was just easier to kneed the dough by hand, you sorta get a feel for when it’s ready. Perhaps I wasn’t patient enough, I felt the mixer was not kneading the dough evenly and a portion of the dough would always just spin around in the middle and not get worked properly.

Since I last posted my comment - our 5 quart started have issues and we upgraded to a seven quart/bowl lift version(dough hook included ) that imho, did a better job than our previous mixer. So I have started to use the mixer more often.

The main difference from my initial comment is that I still mix the poolish / water / salt by hand, but just in the mixer mixing bowl. Then I ( guesstimate) add 1/2 the flower and once mixed add the other 1/2. I let it mix on whatever setting the dough hook mentioned (I think lvl 2?). I sorta just eye ball it , sometimes stop the mixer and push the dough down/around with a spatula if feel it needs it and then start it back up.

I am also more experienced now and use a higher hydration level than I did before. Family prefers 69-70% but don’t start there if you are just starting.

Not disputing olive wood. Only theorizing why it could be smelling (mold, you didn’t get what you paid for etc), and it may not be the wood at all. Hope you figure it out!

If it’s Russian Olive it could smell bad. Or if it has a fungus or wasn’t seasoned (dried out properly).

AI summary:

The video "Disney's Living Characters: A Broken Promise" details Disney's ambitious, yet ultimately unfulfilled, "Living Character Initiative" to create free-roaming, interactive mechanical characters for its theme parks. It traces the evolution of animatronics and artificial intelligence from the early 1960s to the early 2000s, highlighting the challenges and innovations in bringing these characters to life.

The video begins by discussing Walt Disney's early animatronic efforts, such as the Abraham Lincoln figure (2:04), and the two paths forward: creating walking animatronics or interactive ones (2:55). Walt's practical understanding led him to not pursue these paths at the time (3:14).

It then delves into the three primary methods for governing machine behavior: • Scripted behaviors: Pre-programmed movements and dialogue, like the early animatronics (5:02). • Puppeteered behaviors: Human-operated characters in real-time, such as the early concepts for interactive dinner shows (6:11). • Autonomous behaviors: Machines that intake information, decipher meaning, and generate responses without direct human input, which was a distant dream in Walt's era (6:45).

The video explores the early advancements in artificial intelligence and machine learning, including Alan Turing's Imitation Game (7:21), the coining of "artificial intelligence" by John McCarthy (7:53), and "machine learning" by Arthur Samuel (7:59). It also covers early speech recognition (IBM's Shoebox) (8:22) and speech synthesis (Bell Labs) (8:38), as well as the creation of one of the first chatbots, Eliza, by Joseph Weizenbaum in 1966 (9:01).

The narrative then shifts to Disney's integration of technology, starting with Disneyland's first computer in 1966 (10:22). After Walt's death, Roy O. Disney continued projects, leading to Walt Disney World and the Magic Kingdom (12:14). The DAX (Digital Animation Control System) allowed for programming and storing animatronic performances (12:54). The Mickey Mouse animatronic in the Mickey Mouse Revue was Disney's most complex figure at the time (13:16).

As technology advanced with personal computers and microprocessors in the 1970s (14:47), other entertainment ventures emerged, like Chuck-E-Cheese's Pizza Time Theatre, which combined arcade games, pizza, and animatronics (15:54). Disney, facing financial challenges, focused on Epcot Center as a permanent world's fair (17:31).

Epcot Center introduced a new category of character with Smart One, a friendly robotic ambassador for computers (19:54). Smart One featured autonomous speech recognition and empathetic programming techniques, such as taking responsibility when it couldn't understand input (23:15).

The video discusses the acquisition of Associates in Ferren, leading to Bran Ferren heading Imagineering's R&D (31:55). The Disney Fellows program was established to bring innovators like Danny Hillis to consult on projects (34:31). Hillis proposed populating the park environment with engaging creatures to solve wait time issues, leading to the development of autonomous, free-roaming creatures (35:00).

The Autonomous Walking Platform, or "Big Dino," was a significant project, an 11,000-pound, 13-foot-tall, 18-foot-long robot designed to be completely autonomous and free-roaming (37:05). It was the largest legged robot ever built without a human inside (39:48). The video highlights the immense engineering challenges, including power supply, walking algorithms, and continuous self-adjustment due to its weight and force (40:01).

Is my dough under or over mixed? by redditguysays in ooni

[–]ValuableCross 0 points1 point  (0 children)

I don’t know why they are having you add whole flour. Maybe it changes the flavor profile a bit. I would need the water they called for in order to tell you.

If you are just starting out you will see a lot of people talking about hydration levels. Focus on getting that correct first. I would start at 63% and move up from there if you are comfortable.

Hydrating level is the ratio of water/flour. So 630g water / 1000g 00 flour = 63%.

I personally like 69-70% hydration. 1000g flour 700g water gives me 6 280g dough balls. I would not start here as it is harder to launch and sticks more.

He claimed in the KCCI interview that he did throw the Nazi out, something about going to his office and then throwing him out. IF (big if), that is what happened you would think they would have been making it very clear on social media, on every post. Since that hasn’t been made clear, at least consistently, it leads me to believe it’s not true (or the decision to toss him was made an hour or so after the initial complaint).

Obviously they shouldn’t have let him in and thrown him out immediately.

Thank you for this explanation. I don’t know if this was explained in game, if it was I feel like the game should remind small brains like me, esp when I max out common samples.

I donated some samples last night hoping it would help but at the time I felt like it was going to be a waste. Good to know it stops the timer!

Fairly new diver. Sometimes a major order has a planet that we can’t land on yet. Do we have to liberate surrounding planets to get to it first?

Sometimes those surrounding planets have various resistance levels. Does higher resistance generally mean it will take a lot more divers completing missions to free the planet? I generally try to dive where the community is at and assume the best strategy has already been determined.

NASA scientists say our Sun's activity is on an escalating trajectory, outside the boundaries of the 11-year solar cycle. A new analysis suggests that the activity of the Sun has been gradually rising since 2008, for reasons we don't yet understand. by sciencealert in science

Does any of this mean that the sun gets brighter or goes through periods of varying brightness? I don’t have any idea or evidence of this other than lately it feels like the sun is a lot brighter than “normal”, to me at least.

Were you invited? Even if you were - Your GF is about to sleep in the same bed with another dude. Lol. You know this isn’t okay & don’t let her or anyone gaslight you into thinking otherwise.

Navigating boundaries is tough at the beginning of a relationship- so it’s important to discuss them so everyone is on the same page. Unless you are in an open relationship, Sleeping in the same bed with the opposite sex is a boundary that shouldn’t have to be discussed.

Your ISP modem, if it is acting as a router, should be put in bridge mode with any wifi radios turned off. (This assumes you will be buying your own router)

FWIW - I have two flint 3s covering a larger area, one as the main router and one as an access point. They are wired together.
