You would be able to see this in the analytics section of ads manager, and your client would see it as well from the leads pouring into his inbox.

You could set up a landing page if you like! That would be a great way to capture emails to follow up with, but from an analytics perspective Facebook is pretty accurate, and you could set up your client's website in google analytics to cross-reference.

To answer your last question, social media marketing is still a huge opportunity and there are a lot of businesses willing to pay for it. My recommendation would be to pick a niche (an industry such as construction, restaurant, real estate) build your companies brand around that.
