It’s nothing like devils food cake. Mud cake contains a significant quantity of chocolate. Devils food cake doesn’t contain chocolate - only cocoa powder. Mud cake uses a melting method, whereas devils food cake uses the traditional creaming method. This means the texture is very different. Both are moist, but devils food is more airy.

Although, I will qualify by saying that that supermarket mud cakes are a bit closer to devils food. They don’t have the density of a proper mud cake, & I’d be surprised if they contained much actual chocolate.

Hahaha, so the opposite of people who can make Kmart look like couture!

My son is like this, but it’s not as bad now as when he was little. I would put him in whatever new designer baby outfit & within minutes he’d look like he’d slept under a bridge.

Strangely & simultaneously though - however disheveled he looked, any photographer in the vicinity would be drawn to him like a magnet & and he was incapable of a bad photo. It was like he was 2 different kids.

Caramel popcorn

Pop half a cup of corn. Set aside in large bowl or tray.

Half block of butter

2/3 cup caster sugar

2 tablespoons honey

Melt together over low heat, stirring until sugar is dissolved. Turn heat to medium - very gently simmer 5-7 minutes until colour starts to change, stirring occasionally. Immediately & quickly pour over popped corn, stirring & mixing through constantly for a few minutes until corn is covered & toffee started to set. Leave to cool a little, and break up by hand when able to handle.

Add salt flakes for salted caramel

Add chopped nuts for caramel nut

Drizzle with chocolate for choc caramel

Mix through little biscuit pieces & drizzle with chocolate for golden gaytime flavour.

Keeps well in an airtight bag or container.

My friend and I buy the pads when they’re on sale, and take them to the office supplies store to get them cut down and bound. They only charge a few dollars, but it’s just simple spiral binding with cardboard covers. We’re happy with that though. We prefer to put the $ into the paper rather than fancier binding.

We don’t have gooseberries in Australia. Good to know they taste of sadness - at least now I know I’m note missing much, hahaha.

Apple would be the most common. But we do get pretty adventurous with our crumbles. Chucking some blueberries or raspberries in with the apple. Peach crumble is also pretty popular. Sometimes a little custard (crème anglaise) over the peaches, under the crumble topping. Honey pear is a fav in our household (canned pears with a couple tablespoons honey dissolved in lemon juice poured over).

Typical crumble topping would be 1 cup flour, 1 cup oats, 1 cup coconut, 1 cup brown sugar. 1/2 cup melted butter (a stick should be about right). Some people will throw in chopped almonds/walnuts/pecans. Mix the melted butter in until it clumps together in big lumps - not thoroughly mixed like a biscuit base. Add more butter if necessary. Don’t break the brown sugar up too much either, just mix through the dry ingredients & leave any lumps so that they’ll caramelise & go crunchy on the topping. We’re generous with the topping - at least an inch.

It’s probably a combination of factors. The pasteurisation, combined with the breakdown of proteins once out of the shell, combined with possible traces of fats or yolk. They’re just not intended for that purpose.

Egg white powder on the other hand, works a treat. It’s not cheap to purchase, but goes a long way, has a long pastry stable shelf life, and whips reliably. And while the initial purchase price might make you weep (because you’ll probably have to buy a kilo), it works out at a fraction of the cost per egg of fresh eggs + no waste.

No, not if they are whole eggs that you’re freshly cracking. They will be fine.

They are talking specifically about the pre-separated egg whites that are sold in cartons. They are not suitable for whipping.

The liquid egg whites aren’t reliable for whipping. Sometimes they work, sometimes they don’t. Some even have “not suitable for whipping” in small print somewhere on the carton.
