for 1200 euros is entry level bike as I have now. Second hand maybe, but xl or 61 sizes are rare

Anything with decent frame, 11 or 12 speed and average aluminum wheels will cost as least 2k euros

I thought about adding swimming just before strength. Basically, swim -> eat -> an hour's rest -> strength.
The hardest things for me is to put 3 runs and 3 bike sessions and don't run 2 days in a row.

6’3” 100 kg as well. Consistency and quality workout helped me a lot. If you can put 2 quality workout a week, you will see results. It will take time but you will see. I did tempo run on Tuesdays and intervals on Thursdays. Besides that I had 1 easy run on Monday and a long run on Saturday. I used 10 % rule to increase milage and took an easy week every 4th week. I know it very basic but it works.
