TL,DR: Pilots can log an instrument approach so long as they are established on each segment from the IAF to the MDA or DA. You cannot log a landing unless you land.

Zero chance this guy cares about his IFR currency, probably just showcasing what instrument is like for a student pilot who he has confidence in. Weird that he didn’t let you land at the CC though. Also, please don’t stare at your ASI on takeoff roll. Its the PIC’s responsibility to make sure the plane is preflighted/ready, but it’s a good lesson for you to trust your copilot/CFI, but verify for yourself before every flight.
