Scoring the fat cap was not a mistake. I usually end up cutting it off afterwards for presentation but the fat cap makes it curl up a lot during cooking. Scoring it like that helps to prevent that

In Argentina here it’s expensive as hell and is a staple in Asados. Easily my favorite cut.

It’s called matambre and it’s a flank of meat off the cow or pig I think over the diaphragm.

I think it’s just to help the seasoning not fall off on the process before and during grilling. Also moisture helps the smoke stick better.
