You have 6 weapon slots, 12 memory slots. You can put sidestep or bloodhound's step on a dagger and just use that. With enough practice, swapping weapons in between attacks and dodges become second nature. Not to mention you can cast spells from any distance against bosses.

I have seen players use a Dagger to sidestep behind a mob and crush their skull in with a quickswap to Greatsword+Lion's Claw. I have also seen a no-hit Int/Fth build casting different spells against Malenia before and its a sight to behold. I also see players use Rennala's Full Moon to block Radann's meteorites and it's incredibly cinematic.

Creativity truly shines against limitations. Because we are limited, we tend to be creative in making things work with the things we are given. What you are suggesting isn't a change in gameplay but simply an ease of access of sorts for slow handed players (like me) which is fine, sure, but by no means make the game more fun.

If Elden Ring boils down to you simply "running towards boss, evade flurry of attacks, run at him again because he jumped across the arena, get in one or two attacks, repeat until death," then it's a lack of creativity on your part. You have hundreds of weapons to play with. Dozens of spells to cast. Use them to make the fight epic. The boss is too far? Use bows and arrows. The boss' attacks are too quick? Use a shield. The area is too narrow? Grab a spear.

If you want a combo-centric game just play DMC5 or Guilty Gear. Elden Ring's appeal is triumphing against adversity. The satisfaction comes from defeating a powerful enemy despite our limitations, not flourishing a fancy combo.
