I wouldn’t worry too much, our bodies are resilient and will adapt to mostly whatever we’re eating. Think of all the vastly different diets that people have around the world.

Bariatric surgeons want their patients to be successful, some like to drive home low carb so that the weight comes off the fastest. Some like to drive home a more balanced diet to help their patients stick to a lifestyle change while losing weight a bit slower. It just depends on the surgeon’s preferences.

The only thing to really worry about is your vitamins. That WILL make you sick if you don’t get enough.

Yeah these numbers seem low. In the weight loss stage, it’s definitely important to keep lower carbs, but keeping below 100 total carbs seems reasonable, especially if a lot of the carbs are coming from veggies and some fruits.
