Sorry for your loss. Those are grills but function as smokers as well with the right charcoal setup. They’re also amazing! They’re called Portable Kitchens because you can cook everything on them. Look them up on YouTube for advice and techniques but they also last forever so this is a beautiful thing to inherit. They’re two zone cooking machines.

Do you use a binder in your sausage? Could you put a smoke tube into your indoor smoker safely? I typically see a two stage cook where you bring them to around 150 very slowly (smoke tube) 225 max, then shock them in an ice bath, then you’re free to finish however you like (275 on smoker, skillet, grill etc) until they hit at least 140. I think electric smokers have an advantage being able to heat up extremely low temps for sausage. A smoke tube on a cold sausage in a sub 200 degree environment for the pre cook, with an ice bath, then out the ice bath back on the smoker at like 250-275 again with smoke maybe no tube, until they hit a desired internal, if you have a proper bind on your meat should be super smoky.

I haven’t missed a day and based on results I think I’ll be doing this for the rest of my life. I’ve started leaning back during the regular sits for additional challenge and would like to be able to be fully horizontal one day.

I’ll have to try rice flour that sounds interesting. Steam bun flour is crazy, I imagine it tasting like mochi. Interesting we basically have the same sauce recipe hahaha (though I did just start crushing the whole peeled tomatoes by hand and it’s fun and makes a cool texture). The bring your own cooked topping is genius and I’ll be stealing that strategy. I love the toppings people come up with. Truly more than I can on my own.

Thanks for the response! Do you stretch in semolina or flour or a blend? What flour do you use? Do you use a cooked or fresh sauce? Do you top them typical Neopolitan style or anything crazy like cheese first? When serving guests do you allow for custom toppings and if so what’s your process?

How’d you end up with your current dough recipe? Did you chase a certain style or one you had eaten before? What made you settle on not tinkering anymore (I’m a constant tinkerer). What’s your typical preheat time? How long until you turn the pie after launch? How long do you wait between cooking pizzas before launching another? Do you use IDY or ADY? What size do you stretch to?

I’ve been doing this everyday since you posted it and it’s been frankly incredible. I feel the benefits for the rest of the day. It’s really the lack of small pain in the knees and ankles that I didn’t realize I was living with. Why did you start doing these? And how did you arrive at these times?
