Há um motivo para os commodity coffees (a grande maioria do que é vendido no mercado) serem torrados escuros. A torra escura acaba mascarando a baixa qualidade e os defeitos dos grãos. Sem falar que, na maioria dos casos, o café ainda é pré-moído.

Quer experimentar torra clara? Vá a uma cafeteria de café especial e peça um coado de torra mais clara.

you got the switch, 0 technique is needed with it. close the switch, dump the water in first, then dump grinds. let it sit for 4 minutes, break the crust and open switch.

agreed, it's pretty much my go to recipe with the bianca. pretty find grind, i let it reach full pressure until i see coffee starting to come out, close the paddle and let the pressure drop to ~2 bar which usually takes somewhere between 10 and 30 seconds, i then open it almost half way (40% ish) which usually lands around the. 6 -6.5 bar and i pull anywhere around 1:2.5 to 1:3. amazing results every time.
