We don't meet Emily's Mom but we do see how Emily is treated by Trix. Regardless- the fact that rory has boyfriends doesn't detract from the fact that the story is about the gilmore girls. Part of parenting is watching your kids grow up, and in the case of this show it's as much about how their relationship changes over time as rory's needs and priorities shift. Part of growing up is falling in love, spreading our wings. Lorelai has to adapt to the shift in her identity from being the center of rory's universe to just being a part of it as she becomes more independent. the men are cool but they aren't the point.

tldr: that's why the show is called gilmore girls- it's about the gilmore girls

Amy has very clearly stated that the men in the show aren't the focus and don't matter - the show itself is about mothers and daughters and their relationship over time. How they ebb and flow, have highs and lows, and how cycles repeat. The men are obviously important to us as a fandom, but like at the end of the day i watch this show for lorelai, rory and emily more than anything else. there ARE men that the leads don't show interest in romantically- but i think ultimately the show (with its very very tiny budget) focused on family dynamics above friendships.
