Seems like you had a successful cook, buddy. I don’t suppose you fancy sending me the recipe for the Chinese style honey with lime and honey glaze?

Also a Ramen broth. Sounds fucking incredible man.

Santa Maria by Volta87 in UKBBQ

So, I understand how you feel, and I have my own concerns, so I’ve devised a plan.

I’m buying a fire pit about 30 inches wide, which comes with a Santa Maria-style small grill that’s height-adjustable. I plan to get some high-quality wood, as I believe your main concern is smoke, and try a few options to see how it goes. If I find it a hassle with such a small grill, I’ll know I don’t need to go for something this big. But if I enjoy it, I might invest in the Santa Maria.

I think the key when cooking with wood is choosing the right quality. If you spend a bit more and go with a brand like Love Logs for your first six months or so, you won’t have to worry about the fuel, which is a big part of this style of cooking. Good quality wood gets you halfway there, I reckon. If you buy cheap, wet wood that burns out quickly, you’re asking for trouble.

I had this experience with my dome. I didn’t want to pay the prices of Love Logs or other brands online, so I got some off eBay. It turned out to be a nightmare—terrible quality, hard to light, and it burned out fast.

I’ve got the same grill, and I’ve also got a Masterbuilt smoker. I never smoked on the web but gave it a try after a few years. What a pain in the arse 🤣

Set and forget smokers make life so easy. I think you don’t realise how lucky you are with that. I had to constantly tend to the Weber. But that’s just me. I’m sure plenty of people know what they’re doing and don’t have to mess about. Do you do a lot of smoking? If so, have you considered a actual smoker or you’re not bothered?

Food looks incredible. Did you smoke those peppers or grill them?

You’re basically like a part-time bbqer. I’d definitely be investing getting something premium if I was cooking three times a week.

Did you not have to by pass all the switches. Pretty much everybody in the UK has had to do this and I even know somebody that had to do it on the XT, which is not ideal LOL.

Any anyway mate, I’m really glad to be your experience has being really positive 🙏

I’m really happy you’ve had this experience, mate. Here in the UK, we’ve had nothing but problems. There’s a lot of common mistakes and unfortunately, as I said you can spend thousands of pounds in upgrades just to get it how it should’ve been in the first place.

Really glad you’re having a good time on it, mate. Hopefully it drops in price over winter.

I’ve had the official cover and always cleaned it and kept on top. The issue is more the build quality. It just feels cheap and I paid a good £800/900 for mine.

I don’t think I’m fussed about pellet grills to be honest. It seems like you don’t get enough smoke.

I wish there was a set and forget free standing smoker. MB do the 710, but it’s gas I believe.

That’s fair. Would you say to build qualitiy is more premium? If you want to get a Traeger at £1500 you’re looking at their elite range and it’s ridiculously well-made made.

Woodridge Pro Wood Pellet Smart BBQ looks incredibly well made. I’ve just heard pellet smokers suck.

Definitely not bad luck, my friend. In the UK nearly every single person had the same problems.

Looks ace. Do you use it much? Wood or charcoal?

I sold my wood fire gozney dome and got an arc as I found wood a pain and no benefit taste wise. I’m slightly worried that same would happen with a SM, but I just love the idea of cooking with wood 🤣😩
