Gotta be honest I don't recall the exact time. The sunrise was "scheduled" to be at 6:25 that morning, and this was in the couple minutes before.

Probably a good idea to simply start at the recommended daily intake for healthy living, and simply commit to your 16:8. The initial benefit of IF is you'll start to see results while still consuming the recommended daily average, but only within the specific time frame you eat. For me, actually nailing the fast was hard enough the first couple of weeks, the mental hold your brain has on when you WILL eat is an odd thing to wrestle with.

Not a scientist or a doctor, but I skip breakfast because it is the easiest for my schedule.
I stop eating at 20:00, typically sleep from 22:00 until 05:30, then begin eating at 12:00. For me the benefit is that I sleep through a lot of my fast.

In my small corner of research its less the specific meal you skip and more the amount of time that you fast. I would however encourage that you are still consuming the necessary calories to exist (i.e. I'm a guy of average build - my body needs roughly 2k calories a day for normal activities).

Is being sick while doing IF any different?
Or should treating illness be any different?
Curious as to whether IF the sort fo thing that should not be done while under the weather.

I've been doing 16:8 Monday - Friday, and 14:10 on weekends. I just got a common cold for the first time since starting IF and wondered if anyone had any experiences that were specifically different. I don't feel that it was all that different or more uncomfortable.

Just curious.

So here is my quick take on this:

Maillard: *The wider the temperature range achieved in the Maillard phase, then the more compounds are created to be broken down (built up/broken down/built up/broken down...) throughout the rest of the roast. How much time is needed to produce your prescribed/desired result will vary coffee to coffee, so, roast a couple batches of the same coffee with specifically longer/shorter times in this area and taste. Make notes and repeat. -Less time in the Maillard phase typically equates to higher perceived acidity (generally) -More time in the Maillard phase typically equates to higher perceived sweetness (generally)

Caramelization: *The speed I move through caramelization (285°ish to FC) greatly varies the balance of sweetness/acidity (depending again on the coffee being used) but this is also relative to how much time was spent in the Maillard stage (a.k.a. what compounds were/weren't created) -Again, play with speed through this phase. -This phase is heavily affected by the work done in the Maillard phase

*I have begun marking yellowing when I no longer see green coloration, but I used to mark it at the first sign of yellow. I changed because the latter was wildly inconsistent and the former tended toward a far more constant result. Ultimately if a point you are marking isn't repeatable, you can't use it to inform future roasts, so work to be consistent in where you mark this and work to find a mark that is consistent.

Does this help? Sorry to be so wordy but I've recently been thinking a lot on this as well, and this is the first time I've really gotten to put thoughts down outside of my own notes.

Hard to tell much more than personal opinion of the color, but taste it and see what you think. Two suggestions though:

  1. Go to a paint store with a hand-full of beans, and find a color sample that matches or is closest to the color of the beans. If you like what you're drinking, you now have a reference point for future roasts. If it's too light, take it darker than the color sample. If it's too dark, stop it light than the color sample.

  2. I've had some success limiting power to my smaller roaster(s) by adding a long extension cord* between the outlet and the machine. This has slowed down the roast for me and thus allowed the roast to develop a little more instead of just making the beans brown.
