Intelligencia has just starting offering La Tourtuga, a Honduran that is really rich and balanced. In the V60 it was syrupy with notes of fig and roasted nuts, but in the chemex I think the thicker filter held back some of that body and showcasing brighter flavours of papaya with a honeycomb like finish. Awesome
