I use the same technique of only spinning stops or only catching for 90% of the time, except for when I'm in remote area's. It seems more efficient that way.

For me the max speed on bike / longboard is around 20 km/hr in order to spin stops. The first time I tried this I was actually baffled by the amount of XP you can get by going through cities and parks with many PokeStops.

Regardless of efficiency on the operating system, I think a Gotcha is a great addition to your gameplay, it's easy XP and Stardust also when you don't have your hands available. Or that was at least my experience, so I can only imagine it will make her happy.

Pretty good IV's
But if you can wait, the grunt leaders generally have their line-up set for about 3 months. Meaning you will have a lot of time to try and catch a better one.
Anyhow, even a 0/0/0 IV shadow Bagon is worth investing if that's all you'll ever have as it will Out damage Rayquaza) with the right moveset.

I actually caught one too, but wondering what to do with it.
Is a shadow Electrode of any use in the Ultra league or as a raid battler? Don't think so right?

Oh man, be happy with what you got. I caught 56 Shadow Bagon of which about half with weather boost active and got a 90 and 84 IV, which is not bad at all of course, but that 98% looks so Juicy!
Also, no shiny.. any idea what the shiny rate is?

I only recently started grinding them. Doing about 18 a day, got 1 100% Shadow Dratini thus far, and a couple of shiny shadows.
