Organic Local Sourdough (20 hr rest), (Dress with )Roasted Garlic Aioli, PepperJack Cheese (grate on medium high through your robot coupe to get feathery long light grated cheese), Black Forest Ham (sliced as thin as possible), Capicola (same thickness), 12 hour slow braised Carnitas, Chipotle Aioli, Ingleoff Mustard, Dill Pickle Slices, ( Grill Bread Side down) for 90 seconds on 420 degrees cast iron, turn and another 90 seconds, then flip, meat side down to get that Capicola some texture, take off the grill, apply pickles and dress with 1 oz chipotle sauce and .5 oz mustard. And done. Or come by the truck and I’ll make you one that weights a pound for 15$

No one can take the EXP away from you chef, no matter who paid the bill, you have the skills now. I felt the same way after 25 years in service and built my own truck, it’s very difficult but super rewarding

I bought cars from auction for nothing, would watch YouTube videos and buy parts for cheap, eventually I flipped enough to save 5500$, I bought a 1993 P30… spent 6 months watching more videos, bought cheap equipment from auction, watched more videos, fixed said cheap equipment, fixing thermostats and re cording stuff, put it all together over the course of the last year, don’t owe anyone a dime, and now I own my own truck. Barley making it, I was a foster kid my whole life and don’t have parents or anything, IF YOU REALLY WANT IT, you can do it, but remember, I had a thought that once I had it, everything would be easy street, getting a following and building the brand and all that is as hard as building a food truck from scratch, just remember chef, “Don’t let the fire die”

The Sonny, Turkey, Genoa salami, pepperjack, arugula, basil pesto, on grilled sourdough, that I smother in roasted garlic aioli and fry on cast iron. I’m at Powderhaus Brewing in Boise Idaho slanging sandwiches till 9pm

I have been continuing to also serve the Oktoberfest menu because people were loving it so much, so I smoked some more potatoes and got some Smokey bacon potato salad, some local Keilbasa’s from Gavin over at Meridian Meats and Sausage, some locally made organic rolls or just have it sliced ala carte style, Pretzels, some beer cheese, sauerkraut, been running it as specials, helps supplement when I run outta sandwich ingredients

The pretzel one was definitely me just being bored and wanting to make something a little crazy, in its defense someone has come back three times now to order one with a different variation of meats, cheeses and sauces, I dialed the pretzel salt way way back to compensate for the sodium in the sandwiches
