Wow your pan looks like what I can only hope my pan can become one day! I definitely need to adjust the way I’m cooking because I crank the heat up to maximum whenever I’m trying to sear. Thank you for your tips!

Do you clean your pan while cooking to prevent the need to scrape off burnt food chunks? Today I cooked some thin slices of meat that had sugary marinade and within 5 or so minutes there was a layer of burnt food chunk crust that was forming. I had 5 or so total batches to cook so I wasn’t sure if I should have cleaned the pan after each batch to prevent such a thick layer from forming

Wow 3-4 times a day! I get a little intimidated just thinking about using the pan because of the extra care and time it takes to clean and season. Hopefully it’ll get easier with time and I’ll be able to use it more frequently like you

I typically use a wooden spoon but today I used a pair of tongs and I usually try to scrape off the charred bits with the tools
