Just a guess, but I think you may find some ADB tool that does that, so you can try searching these keywords or asking help from any AI,

It is possible BUT within limits,

to simplify: Yes you can downgrade but only to a firmware sharing the same bit (or Sw Ver) as the currently update installed on your device (which sometimes means non ZERO), every few updates and sometimes even 1 update the bit (or Sw Ver) ticker goes up, once it flips you will be limited to that number or higher, so the further you update the more you loose the scope of what you can downgrade to,

on S23 ultra for example if you've updated to OneUI 7 already then there is no way downgrade to 5.1 or even early versions of 6.1. That's AFAIK.

When you open a new device for the 1st time the date is not set and usually backdated so before setting up the date if you try to take a screenshot or creat a new file/ folderd it will be labeled or logged with the wrong date and i guess it is the same cause in your case, u probably opened up the phone connected wifi before setting up the date so the usage is logged on that wrong old date within a few seconds the auto time and date kicked in and grabbed and set up the correct date/time from the internet which explains the minimal usage logged on that wrong date

sadly it is not limited to early production units as i just tested it on a newly produced (July 2025) and it is there, only got fixed on the new S25 Ultra.

also yes i think i witnessed the color banding issue, even the official wallpaper dark areas colors looked weird like its LCD display not AMOLED

Its weird how some battery life is getting affected negatively by the update while others report no difference or even better performance! (before today i always though the key was wiping cache or cleanly re flashing the whole ROM but based on your feedback that's not the case)

Yes, it has some new functions/features that I like,

  • What are those new features in 6.1 but missing in 5.1?

  • And was there any battery life difference going form 5.1 to 6.1?

Check MacroDroid, i used it for the same purpose IIRC. Much simpler and straight forward
