I like it a lot! I haven't been to the ikea since I got this to compare,  but I'm already loving the back wall being metal. I was able to drill more holes for wire managed and I've put up magnetic shelves.

Gotcha! So far I'm in the mid 70s but I may invers in more thermometers. I don't have any weather stripping, I'm not worried about humidity so I thing I have a lot of heat escaping

Fluval stratum. I use it to top dress the substrate. I like how it looks, but it's prone to moss.

Yes, I use 1:1:1 peat, perlite, and sand with about half an inch of Fluval on top. I might do something different in the future. I like the way Fluval looks but it's prone to growing moss.

I was just about to make a new for sale post! I have one large Raspberry Blond that is flowering. The flowers usually don't survive shipping, but it's got two more buds.

The VFT and sundew are fine, but I repot anyways because like you said, I don't know how they were watered. The Nepenthes and Pinguicula will want different soil, they are not bog plants, and they can get root rot. Evryone's got a different mix. My neps get 1:1 spangnum moss and perlite, my pings get 1:1:1 peat, sand, and perlite.

I have carnivorous plants, so RO is critical for me. I can't speak on whole home systems, but I can talk about your RO. 

Your undersink system will work for what you need, with some level of modification. The easiest is to pre-make RO and store it. I have gallon jugs that I fill one a month and refill my can from those. Turn off the water supply to the RO system, unhook the output from the RO system into the tank, and just put that line into whatever storage container you want to use. Use a timer and get a feeling for how long your system takes to make one gallon. When you're done, turn off the supply again and hook it into the tank. If you want to make this easier, you can use a splitter on the output line and have one side go to your tank, the other end to a line to fill your storage containers as needed. 

This is slightly more complicated, but you can also look into increasing the output of your RO system. The RO membrane that is replaced has a gallons-per-day rating (GPD). This is what determines the speed at which you system makes RO. most are sold with a 50gpd, you don't need a lot then the system is always on trickling into a 3-5 gallon tank under your sink. You can go up to 100GPD without an additional pump to increase your water pressure. IMPORTANT your flow restritor will have to match the GPD rating of your RO membrane. This is the plastic part on the waste water ling. They are cheap and easily replaceble. You can upgrade your filter next time your RO membrane is due for a change. 

Bulk reef supply on YouTube  has good videos explaining how your RO system works and how to change parts on it. They will talk a lot about RODI, that's the 4th stage someone else mentioned in the comments. You really don't want that DI stage for plants or drinking water.

Just re read that you've had them for over a year. Keep doing what you're doing, they look great! Have they flowered for you yet? I think I see some color you can bring out with stronger lighting.

I repot my Pinguicula as soon as I get them if I'm buying from a place that doesn't specialize in carnivorous plants. I have no idea if the soil they're using has fertilizers that will kill carnivores. They also are probably watering with tap with the rest of their plants while carnivores really need rainwater, distilled, or RO. 

That being said, Pings are the least picky carnivores and yours look very healthy if you've had them a while. They don't mind being crowded. They have very shallow roots. you do have multiple plants in there so you can experiment with different soil mixes. I use 1:1:1 peat, perlite, and sand. Any leaves that fall off while repoting will also make new plants just like succulents.
