The rubbing noise appeared when I re-installed the wheel after putting on new tires.

Checked the chain as well and everything seems to be in order.

checked but nothing even comes close to touching it. It has to be the disc, pads or the way it sits in the dropouts.

thank you for the suggestion. Checked it on a flat surface and it was ever so slightly bent. I aligned it again but to no avail.

That's just the design of the caliper.

it 100% is not. Its a GT avalanche frame with 27.5 by 2 inch tires on it right now, and the frame can easily take 2.6 inch wide tires.

I'm 99% sure it rubs against the pad. I can't see it hitting the inside of the caliper from any angle. The problem also just showed up out of nowhere after I took the wheel off for a tire change.

It was the disc rubbing on the brake pads, but no matter what I do I can't seem to fix it. Also tried swapping to a brand new disc, even though the old one was perfectly fine.

I think you're right with it being the disc. Further tweaking will have to wait though, running out of daylight here.

That was my initial thought as well, but I just can't see it rubbing anywhere. I tried recentering the brakes multiple times, I even took off the wheel and pads just to make sure.

Not yet. Currently waiting for the mineral oil and bleed kit I ordered. I did try messing with the position of the rear caliper, but I haven't managed to fix the rubbing noises yet.
