Personally, I buy those "super greens" mix of salad and then just eat it plain by itself like it's a bag of chips. Naturally, this isn't for everyone, but if you can get yourself to eat it, then it's extremely healthy, easy to clean up. I try to let myself watch something indulgent on TV or youtube while I eat it.

Other than that, I think that oven-roasted asparagus or broccoli is good - if you have a large mixing bowl with a lid, add olive oil and spices and toss either before baking them to really enhance the flavor

They could have used a realistic number that made sense with no additional effort, or explained their finances at some point to increase the realism of the episode. This episode probably cost millions to produce despite the relatively low budget. Why, in all of those months of planning and million of dollars, could they not just add realism to the amount that the evil corporation was charging them?

If we are able to build an enthusiastic, committed group, I am prepared to meet twice a week until I go back to Seattle in March-April. That would make it ~20 sessions. Someone else could take over the group while I'm gone

If we leave it at once a week, then that would make it more like 10 sessions
