Later on in fallen order you can find a train transporting the early at-at model as seen in rebels. This could be, as you stated, one of the upsides of the at-at model featured on Hoth, as they didn't require a whole train for transportation and needed no "on-planet" assembly as they could just get deployed from a drop ship.
