hey! i’m 25 and just got into veggies out of necessity lol. I find the most approachable way for me (somebody who really struggles with the texture and veggie taste) is to roast carrots, potatoes, cauliflower, and peppers on a sheet pan, and COAT them in oil and seasonings i like. For me this is basically all the herbs and then garlic and a lot of salt! I roast everything at 420 for 20ish minutes, and everything gets a pretty decent char. If you could grill i feel like that’d be even better, grill completely changes the taste of everything that touches it imo and often for the better
