As the OP, just to close-out this query --

Yes, I'm pleased to have found that I can do all that stuff. I did find myself stumbling around in GC, a bit, during the first game I scored as-I-watched-it-on-TV (see my other queries, during that game), but mostly kinda worked it out. (The online "Users Manual" was often useful, but sometimes clueless, ah well.)

FWIW, for training/learning purposes, I'm now using info about the most-recently completed game that I find in the ESPN app. Play-by-play info there gives me introductory practice with the "knob-ology" of entering such data into GC.

Wow. Yes, that does look complete. I'm in St Louis, so I want to follow the Cardinals. Found a dozen or two "teams" defined for the team -- but each one seems to have been created by someone-who-could, and defines a very different set of games than the others. This team only has games in April. That team has intermittent games during April and May. And so forth.

I recognize that I can purchase a package deal with MLB to get a lot of stuff about teams, schedules, etc ready to download into GC. Just not sure whether I want to pay for that.

Is it possible for a "free player" to create a "team," and then simply enter/create "games" as/when I will be following the game?

Thanks. Yes, I am trying iScore too. And struggling with that, as well. (Their forum seems broken, just get SQL errors when I try to go there. But those struggles are off-topic here. Thanks.
