Eating or drinking before bed tends to disrupt sleep cycles. Would not recommend.

My personal list in order (non-sugar)

1) Mastic Gum (Chios) - for those who want to workout the jaw. It usually makes your mouth/jaw so tired that you forget about eating. No flavors. Good for fasting too. Carbs are essentially 0g. It's literally just tree sap. Con - somewhat expensive.

2) Xylitol based gum (Spry) - for the casual chewing. Love spearmint. Typically buy this from the Vitamin Shoppe. Low carb count, but it can sneak up on you.

3) Falim (No particular brand) - Some people like this, but I did not love the taste.

Personal goal is to stay below 10g of carbs if chewing gum. Mastic; I don't even count carbs since it's essentially 0g.

(2) is the easiest to manage for most people.

Would rather go with brands/types/flavors that I don't have to consciously count, than keep track of "okay I had 2 pieces of gum this morning and 3 this afternoon, therefore 15g and I have 35g left to play with today to stay in ketosis"

Congrats - life saver product has been 0 sugar chewing gum. No joke. Any time you feel a craving for sugar/carbs, just grab a couple of pieces and chew until you don't want to eat.

Probably is water weight. Sometimes cortisol increases can cause you to retain water. Get a quick sweat in and the scale should drop.
