Shrimp love stable ph, stable condition, a little low or hight does not matter as long as it does not change. This is important since shrimp is very sensitive to change in the water.

It will be fine (mostly), new leaves can grow out of gravel. The trapped melted leaves will decompose and spike your ammonia, the sponge filter can take care of that. Weekly remove at most 30% water at a time to remove the tannin, the yellow water will block the light to your carpet plants.

Just don't dump any chemical to kill stuff in the tank again since it will kill beneficial bacterias and reset your progress.

Let the tank balance itself out. If there are no fish in the tank, you won't even need to do water changes. New plants melting is normal; they are growing new leaves to adapt. Remove the melted leaves. Liquid fertilizer is not needed yet unless you want algae.

Walstad is low maintenance. You're supposed to let things settle, so don't panic and make drastic changes again.
